That's lovely he is doing fine 
There are a few Chinese hamsters on here at the moment, some quite new as well. Taming can be slow progress as they can be a bit shy and skitty. How is it going with little bear? Also it would be lovely to see a photo!

TAMING UPDATE:
He is become more fond of me, when I offer my hand with food he is getting on quicker. He takes food from me no problem, he hasn't been so jumpy. I try giving him a gentle, long touch on the back with either my hand or a toothbrush. If I lean down and press my face at the bottom of the bars, he'll sometimes come up to me and sniff my nose. I'm so glad he's getting better and forgiving me for trying bathtub training!

Is it okay if he doesn't chew? I've never seen him do it. I bought some apple sticks yesterday and he hasn't touched them. Nor his willow ball, wood sticks, barrel bell, and a stick through a wood slice. I even gave him cardboard with seeds inside! He just doesn't chew, and I'm worried. What should I do?

Cauliflower is fine.
Don’t worry about him not chewing wood, quite a lot of them don’t.
They don’t actually need chews, just heating the right kinds of foods should keep their teeth trim so it’s not a problem.
He might enjoy a whimzee if you can get those, the tiny toothbrush ones.
You could also try dandelion root too but tbh most of my Chinee have been keen.
Try giving him a monkey nut in the shell, make a small hole in one end to get him started & see if he chews that, they usually enjoy those.

He won't chew through it. He doesn't even chew through toilet paper with seeds inside!
