Is it normal for a Syrian hammy’s skin to be a lil pink behind his ears?

Yes ,totally normal,most pigment doesn't go that far.into the crease. Just make sure it isn't irritated in any way.

How can I make sure it isn’t irritated? He won’t let me pick him up or touch his head lol

It doesn't look to be irritated going by your photos .But they can get dry skin here too,just like we can in folds,although it's quite rare. But usually,if it is irritated it's also quite flaky,and it doesn't look to be
